Add a little hygge to each month

Thank you for reading along. I always treasure hearing from you and discovering what inspires you.

Soon, I’ll be heading to Denmark to reunite with our youngest son and his Australian girlfriend, who have now been living there for more than a year. The trip will be a blend of work and pleasure — and I feel very fortunate to have a job that allows me to work from anywhere.

Lately, I’ve been preparing small gifts to bring for friends and family, all thoughtfully chosen with travel in mind. When travelling far, light gifts are good gifts. I’ve put together little bundles of homemade herbal tea, seeds collected from my garden, dehydrated citrus slices, and homemade dukkah.

I’ve also been enjoying dreaming of the Scandinavian summer while watching the beautiful mini-series about Norway’s now King and Queen, Harald and Sonja.

I hope this little greeting inspires you to find moments of hygge in whatever fills your days at the moment.

DUKKAH

– simple to make but packed with flavour

Dukkah is one of my favourite toppings to have on hand in the kitchen. I love sprinkling it over avocado toast, salmon, salads, soups, roasted vegetables, or serving it simply with extra virgin olive oil and fresh bread as an easy starter to share with friends and family. It adds such beautiful texture and flavour to even the simplest meal.

It also makes a wonderful homemade gift. In this version, I have used fennel seeds collected from my own garden, which makes it feel even more special.

4 SMALL JARS

INGREDIENTS

½ cup hazelnuts
½ cup almonds
½ cup walnuts
½ cup sesame seeds
2 tbsp fennel seeds
1 tbsp ground cumin
1 tbsp ground coriander
sea salt

Place the hazelnuts, walnuts, and almonds in a dry cast iron pan (do not add oil). Toast briefly over medium–high heat, tossing regularly, until the nuts turn lightly golden and fragrant. Add the sesame seeds to the mix. Toast over medium heat, stirring regularly, until the sesame seeds turn golden brown too. This happens quite quickly, so keep a close eye on them.

Add the toasted nuts and sesame seeds to a small food processor fitted with a blade. Add the fennel seeds, cumin, coriander, and a generous pinch of sea salt. Pulse a few times until you reach a coarse mixture. Be careful not to over-process — the dukkah should still have plenty of texture. The dukkah can also be stored in an airtight jar for up to two weeks.

LEMON VERBENA TEA

One of my absolute favourite plants in the garden is my Lemon Verbena. In fact, it has grown so much over the years that it now feels more like a little tree.

Every spring, it is always the very last plant to grow leaves again, and each year I worry that it may not return. That only makes the joy even greater when fresh green leaves suddenly begin to appear — and then continue growing enthusiastically right through to the first frost.

Throughout summer, I regularly cut small branches to flavour water, but lately I have also started drying the leaves to enjoy as tea during winter. The fragrance is beautiful, fresh, and citrusy, and the flavour wonderfully light and refreshing.

Lemon verbena is known for its calming qualities and is rich in antioxidants. Traditionally, it has been used to support digestion, promote restful sleep, soothe inflammation, and help reduce stress.

I often find inspiration in local community gardens wherever I go. Most recently, I visited one of my favourites the Kings Cross Community Garden. They grow a wonderful variety of native plants, and it is run by passionate locals who are always happy to chat and share their knowledge.

They told me that many of their plants come from IndigoGrow in La Perouse — a beautiful nursery specialising in native bush foods and endangered local species. I went there and brought home a few varieties of lemon myrtle, which I now use for herbal teas.

Lately, I have been enjoying the beautiful Norwegian mini-series “Harald & Sonja” — released internationally as “The Commoner”. The four-part historical drama tells the story of the nine-year secret romance between Crown Prince Harald of Norway and the commoner Sonja Haraldsen, and their long struggle against royal expectations and tradition in order to marry.

It is both romantic and quietly moving — a story about love, patience, and staying true to one another despite duty and public pressure. Watching it has made me dream even more of the Scandinavian summer ahead. In Denmark, the series can be watched on DR, and in Australia it is available on Apple TV.

A glimpse into recent creative work and collaborations.

This month, I’m sharing a glimpse from one of my favourite book projects from the studio — EN HAVE FOR LIVET, a classic yet contemporary coffee table book I designed for Politikens Forlag in Denmark. Created in collaboration with Prinsesse Alexandra af Sayn-Wittgenstein-Berleburg, the book explores the beautiful gardens of Egeskov Slot through photography, garden tips, hand-drawn illustrations, and thoughtful editorial details.
It was a truly inspiring project to work on — balancing elegance and functionality while creating a layout that felt both timeless and inviting. From illustrated garden tool icons to carefully curated imagery and typography, every detail was designed to reflect the atmosphere and beauty of the gardens themselves.
