Add a little hygge to each month

I’m really looking forward to Easter — it’s a time for family and time in the garden. I’ve already planted kale, cabbage, and broccolini. Last year, I was so impressed with my cabbage harvest, and I’m hoping for another great season. This weekend, I have started decorating a few olive branches with my paper Easter eggs and next weekend I will create a little Easter wreath. You can find instructions for both in Let’s Hygge Easter!

A few of our young goats recently found their way into my kitchen garden and ate all my rhubarb! Thankfully, it has grown back with fresh, delicious stems. To celebrate, I made a simple rhubarb crumble, and I’m sharing the recipe with you below.

RHUBARB CRUMBLE with Vanilla Ice Cream 

I made this dessert for my book club. It was a huge success and so easy to prepare in advance. I simply heated it gently before serving, added a scoop of vanilla ice cream on top, and garnished with a sprig of lemon verbena. The original recipe is from my friend Anette Eckmann, but I’ve adapted it to be gluten-free using almond flour.

Makes 6 serves

INGREDIENTS

Rhubarb Compote
500 g rhubarb, cut into 1-2 cm cubes
100 g sugar

1 vanilla pod, seeds scraped

Crumple
125 g butter
150 g almond flour
100 g sugar
50 g chopped almonds

 

Rhubarb Compote  
Wash, dry, and cut the rhubarb into cubes. Slice the vanilla pod in half and scrape out the seeds. Mix the seeds with a bit of sugar on a chopping board to enhance the flavour, then combine with the remaining sugar and rhubarb. Grease an ovenproof dish with butter, add the mixture, cover with foil, and bake at 200°C for 15–20 minutes.

Crumble
Mix butter, almond flour, sugar, and chopped almonds. Crumble the mixture over the rhubarb compote and bake for another 15 minutes or until golden brown.

TIP! I made mine in the morning and simply reheated it lightly before serving.

Lately, I’ve been captivated by Danmarks Næste Klassiker (Denmark’s Next Classic) on Denmark’s national television. Now in its sixth season, this design competition never fails to impress me. I love watching how designers work and getting insight into their creative process.

The show challenges top designers to create future furniture classics — chairs, lamps, tables — pushing the boundaries of aesthetics, craftsmanship, and functionality. A jury of experts evaluates their designs, ultimately crowning a winner. Though Danmarks Næste Klassiker is in Danish, it’s so visually engaging that language hardly matters!

I really adorn listening to Annie Lennox’s debut solo album Diva from 1992. At the time she had had a 2 year break and were in doupt if she could create and album for herself. She proved herself wrong and the album was a massive success – hitting the Chart at number one and achieving a quadruple platinum. Its an iconic album that I keep going back to hear.
