Add a little hygge to each month

Happy Easter!

I’m delighted to have my parents visiting from Denmark, and we’re planning to spend the days off cooking, baking, and decorating together.

PLUM TART WITH PUFF PASTRY

Plum tart was my grandfather’s favourite cake, and I’ve successfully recreated it, possibly starting a new Easter tradition. It’s light, fluffy, and best enjoyed the same day. The combination of plums, vanilla cream, whipped cream, and fluffy pastry evokes childhood memories.

SERVES 6-8 PERSONS

INGREDIENTS

2 sheets of frozen puff pastry (23x23cm)

PRUNE PUREE
150-200 g untreated prunes without stones
1/2 cup water

VANILLA CREAM
1 vanilla pod (2 tsp vanilla paste)
2 egg yolks
3 tablespoon of sugar
1 tablespoon cornstarch
1 cup milk

1 cup whipping cream
icing sugar to drizzle on the top of the cake

Let the frozen puff pastry thaw almost completely on the kitchen counter, which takes about 20 minutes. Preheat the oven to 200°C. Bake the base and lid in the oven for approximately 30 minutes. Allow them to cool on a wire rack.

PRUNE PUREE  Coarsely chop the prunes and cook them in a saucepan with water and sugar until they form a mushy consistency. Let the prune puree cool.

VANILLA CREAM  Scrape the vanilla seeds from the pod and mix with sugar. Whisk egg yolks, vanilla sugar, cornstarch, and milk in a thick-bottomed pan. Heat and cook over low heat until thickened. Let it cool, stirring occasionally.

Whip the cream until stiff peaks form.

Assemble the tart by spreading prune puree on the base, followed by the vanilla cream. Place the lid on top and sprinkle with icing sugar. Enjoy!

COLOURED EASTER EGGS WITH HERBS AND TURMERIC

ALL YOU NEED:
eggs (hard-boiled)
3 teaspoons ground turmeric (for yellow colouring)
Boiling water
3 teaspoons vinegar
Paper towels
Herbs or ferns
Elastic bands

STEP BY STEP:
Place turmeric in a bowl, pour boiling water over it, and stir in vinegar. Let it sit for 30 minutes to develop color. Clean eggs thoroughly with vinegar and paper towels. Arrange herbs or ferns around each egg and wrap them in paper towels or old tights, securing with elastic bands. Boil the eggs in the turmeric dye for 10–12 minutes. After boiling, cool the eggs and remove the wrapping. Rub with a few drops of cooking oil for a brighter, shinier color.

I adore my goose eggs, given to me by a dear old friend, Less who has since passed away of old age. He imparted a wealth of gardening knowledge to me here in Australia, always there to answer any questions about planting times or locations. Knowing how much I valued these exquisite eggs, he lovingly collected them from his geese and proudly presented them to me. Some I’ve added a loop of string using glue, while others I nestle in branches. These magnificent goose eggs hold a special place in my heart, serving as a beautiful reminder of Less. He joined us for Easter lunch last year, delighting in tasting all the Danish specialties before settling into our rocking chair for a little snooze before dessert. Though he may not be physically present this year, his memory will be warmly cherished in our thoughts.
