Add a little hygge to each month

I hope this finds you well and ready to welcome the New Year! The completion of a year and the welcoming of a new year naturally calls for a bit of reflection. I like to create our family calendar with photos taken over the past year which is a lovely way of looking back while planning ahead. I have enjoyed reading The Wild Journal which is inspiring even more outdoor projects – all of which I will share with you along the way.  If, like me, you are also feeling the need for a quick and healthy dish, I am sharing my Bean, Capsicum and Tomato Nachos recipe which is one of my favorite dishes at this time of the year. I am also sharing the song I want to dance to on New Year’s Eve!

One thing I really enjoy making is the new year’s family calendar. I develop 2-3 photos from each month of the past year that capture the essence of our lives. There are some years that I have used the app “Collageable”  to make a grid of 4 photos (like the one shown here in the second photo) that I then save to my camera roll and send off to be developed. Every year I buy a Kikki K family calendar and glue in each month’s photos from the previous year. The calendar hangs in the kitchen and it is a fun reminder of what we were doing at the same time, one year ago. When the year is over you can tear off the calendar part and you are left with a lovely little photo book. I now have 8 years of photo booklets that sum up each year. I keep them in a basket next to the couch for everyone to have a look at. This project doesn’t take long but is a lovely way of reflecting on the experiences of the previous year. After all the heavy Christmas food, I am ready for a quick and easy vegetarian dish. This is my go-to recipe if I feel like something healthy but fast and easy. It doesn’t take more than 15 minutes to prepare and then 20-30 minutes in the oven – I have even served it for friends on a Friday night. If you have any leftovers, they are brilliant for lunch the next day, you just gently reheat.

Bean and tomato Nachos

2 tsp cumin
2 tsp coriander
1 tsp smoked paprika
1 small red onion, finely chopped
400g cherry tomatoes, halved or 1 can of diced tomatoes
400g can red kidney beans, drained, rinsed
400g can white cannelini beans, drained, rinsed
1 yellow capsicum, deseeded, diced
1 red capsicum, deseeded, diced
a drizzle of lime juice
1 bunch coriander, chopped
olive oil
1 bag corn chips
2 cups grated tasty cheese
2 avocados

Preheat the oven to 180ºC. Heat a frying pan over medium heat. Add spices and fry for 1-2 minutes or until fragrant. Add the onion, beans, capsicum, cheese and half of the tomatoes to a refractory (oven proof) dish drizzled with olive oil. Sprinkle the spices over the dish and give everything a good stir. Bake in the oven for 20-25 min. Serve with fresh diced avocado, chopped coriander and the rest of the halved tomatoes and a basket of corn chips!

I have just finished reading The Wild Journal: A Year of Nurturing Yourself Through Nature and what a lovely read this book has been. The Danish series “DARKNESS – those who kill” on SBS ONDEMAND has kept us up until late. The Danish title is “Den som dræber – fanget af mørket”. In the first season an investigator teams up with a profiler to investigate the mysterious disappearances of several young women. The actor Natalie Madueno plays a very interesting character with more of her background being revealed in the second season. As always, it was pure joy to be “back in” Denmark and listen to our unique language being spoken…

One of the biggest surprises in my kitchen garden this year has been to see the carrots bloom. I am sure they are not meant to reach the flowering stage and that it is a sign that I have either planted them too late in the season or that I should have harvested them earlier, but I don’t mind as I have been rewarded with the prettiest carrot flowers. I brought a huge bunch back home to Sydney and they have now lasted for over 3 weeks in the vase. I have changed the water frequently but I am amazed by their longevity. I will keep my fingers crossed that I can make the same wonderful mistake next year!
