Hello, it’s Kristine here. It’s time to welcome July, with the excitement of celebrating
Christmas in July coming up and cosy projects for the long, dark evenings indoors. This time of year is especially hyggeligt as it reminds me a lot of the Danish winter, which is so full of traditions.

Let’s celebrate Christmas in July. I am planning to make my Grandmother’s Honey cakes.

DANISH HONEY CAKES

Makes about 46
¾ cup honey
1¼ cups firmly packed
brown sugar
3½ cups plain flour
1 teaspoon bicarbonate
of soda
1½ teaspoons cinnamon
1½ teaspoons ground cloves
1½ teaspoons ground ginger
1½ teaspoons ground fennel
2 eggs, lightly beaten

ICING
3 cups icing sugar mixture, sifted
3 tablespoons boiling water

Preheat oven to 200°C. Line 4 large baking trays with baking paper. Place honey and brown sugar in a saucepan, and stir over a medium-low heat until sugar dissolves. Cool for 10 minutes.

Sift flour, bicarbonate of soda, cinnamon, cloves, ginger and fennel into a large bowl. Make a well in centre of flour mixture, then pour in honey mixture and egg. Mix with a wooden spoon until a soft dough forms.

Turn dough onto a lightly floured surface and knead until smooth. Using lightly floured hands, roll dough into walnut-sized balls. Place on prepared trays, allowing room for spread- ing. Bake for 12 minutes or until lightly golden. Cool on trays.

To make icing, mix icing sugar, butter and water in a bowl until smooth. Top each honey cake with a teaspoonful of icing. Set aside for 30 minutes to set.

I really enjoyed watching ATLANTIC CROSSING. The series is wide-ranging but pays special attention to interactions between Crown Princess Martha of Norway and President Franklin Roosevelt during the period when Martha was a war refugee in the United States after fleeing the 1940 Nazi Invasion of Norway. The Norwegian Crown Princess Märtha is played by Sofia Helin, who is known for a very different role as the bipolar investigator at The Bridge. She is an eminent actor and brilliant in this role too. President Franklin Roosevelt is played by Kyle MacLachlan, and he too is a joy to watch… Enjoy

The wattle is in full bloom. I love the wattle as it reminds me of when I lived in Florence in Italy. Its scent is delicate and fine. The small stars buds, before they fully flourish, are my favorites. They keep the color and looks really pretty. The Golden wattle is the National flower of Australia. We have 1,210 different species of wattles here.

to listen to the beautiful Swedish text. Now that we can’t travel, it’s a nice little way of dreaming yourself home to the lovely summer nights in Scandinavia.
