Add a little hygge to each month

I am loving the beautiful community I can see being created around ‘let’s hygge’. Thank you so much for all of the kind messages I have received about my CHRISTMAS e-book. It is so wonderful to hear your responses and it makes me very happy to hear how you have been inspired to do things that make you smile. I am now back in Sydney after 106 days living in The Barn at Turon Gates. It was a fantastic experience and showed us that working and living there more permanently is possible. It is wonderful to be back in Sydney and be able to see friends and family. For many of us, November will be a month to celebrate and be social so I am sharing with you my method for preparing dehydrated oranges – perfect for festive drinks, and there is also a delicious recipe for my trout pâté.

Last year for my birthday, I was gifted a dehydrator. It’s such a great system for preserving herbs and fruit and an added bonus is the lovely scent created in the kitchen while its contents dehydrate! In autumn when I cut back all of my garden herbs, I dehydrated the harvest and had my own dried herbs for winter. I also use the dehydrator for fruits – dehydrated apples are very popular in our house and they are a great snack if you feel like something sweet! The flavor of a fresh fruit changes a lot when it is dried, to become much more enhanced and perfumed, in a delicious way.  As I was living at The Barn when I made this season’s preserved oranges, I dried them in the oven. It’s easy to use an oven if you don’t have a dehydrator: Set the oven to the lowest heat, arrange your sliced oranges on a tray lined with baking paper and pop in the oven for a couple of hours. Afterwards, I leave them on their tray and let them dry even more in the sun. If you use a dehydrator, the process will take 6 to 8 hours at 60 degrees. Dried oranges are perfect in drinks, for infusing in water and are delicious dipped in chocolate!

This smoked trout pate is Spring in a mouthful. I first tasted it at the BOATHOUSE at Balmoral. I loved it and immediately went home and tried to replicate it… now I think I like mine better! (Shh.. don’t tell them I said so!) I have it for lunch on sourdough or to top blinis for a delicious starter or finger food to serve at parties.

Smoked trout pate on blinis

1 smoked trout whole (Woolworths) or a fillet of smoked trout

1 little red onion or 1/2 of a bigger one, finely chopped

1/2 handful of dill, finely chopped (keep a bit for plating)

250 g sour cream

Salt & Pepper

Sumac, if you have it (to sprinkle for plating)

Remove the head, tail, skin and bones if you are using a whole trout and flake the delicious smoked trout meat using a fork. An even faster solution is to buy a fillet of smoked trout. Mix the onions, dill and flaked trout with the sour cream, until the trout is blended evenly into the pate. When serving, sprinkle with sumac and decorate with a sprig of dill and/or edible flowers.

It will keep for a couple of days in the fridge… but it has never lasted that long in our house!

‘The Chestnut Man’ is based on a novel by Søren Sveistrup who also created ‘The Killing’ which has been shown on SBS. ‘The Chestnut Man’ was created for Netflix by a Danish team of great creators and actors. It is incredibly well produced and very scary. I watched it over a weekend as I really ‘needed’ to know how it would end!

Coming back to Sydney, I was met with the most beautiful scent of Honeysuckle on my morning walks. The fragrance takes me right back to childhood summer holidays spent at my grandparents’ farm. Honeysuckle grew wild along the narrow winding roads that I would cycle along to reach the beach and the scent would captivate me. The elegant Honeysuckle flowers are like small ballet dancers performing on the leaves.

Every month I highlight a Danish Design item to cherish. As this month has been focused on celebration and gatherings, my highlight is a Danish speaker by Bang & Olufsen.
