Add a little hygge to each month

Thank you so much for signing up to my Journal ‘Let’s hygge’. The overwhelming support has filled me with energy and gratitude. I have so many projects that I would like to share with you. Spring and the warmer weather have lit my eagerness to start new projects outside. Here at The Barn we have worked on a 30 meter long, low garden bed for potatoes, pumpkin, zucchini, corn, and Jerusalem artichokes. Every morning before work we have been up there filling the new garden bed with fresh soil and manure. It has been a lovely way to start to the day and a very good work-out too. I have also enjoyed a quieter time, sitting in the sun, making the small newspaper pots. They are fun to make and very useful. The corn seedlings, that I raised are now ready to go into the new garden bed and the pumpkins are not far away. If you need a little break, I can recommend ‘Another Round’, the Danish film that won an Oscar for Best Foreign Language Film! The title music has been playing loud over the valley at night during the resent weeks…

I have enjoyed making these small newspaper pots. I have used a wooden paper pot maker my mother gave me, but you could even use a little glass instead. The great thing about this idea is that when planting outside, you can leave your seedlings in the little pots and the newspaper will dissolve over time. I have kept them inside in a sunny spot and moved them around so they got the most possible sunlight. I have sowed zucchini, pumpkin, beans, spinach and some wild white flowers and Australian Grasses: Native Lemon Grass and Kangaroo Grass. It is the first time I have sowed from seed, and I find it very rewarding to see the small sprouts break the soil and grow bigger and stronger every day.

I have so much rhubarb in the garden that I want to make some rhubarb jam and a little rhubarb syrup for cordial or evening drinks. When I make my rhubarb jam, I always make a little syrup at the same time. I add a little more water than needed and then drain the lovely syrup when the rhubarb is soft and ready. I use rhubarb jam on my yoghurt with muesli in the morning, on bread, in cakes and on pancakes. The syrup has a divine color and is great as cordial with lemon slices, ice cubes and sparkling water, or in a drink with a sparkling wine.

RHUBARD JAM AND SYRUP

500g rhubarb, chopped in 20mm pieces
3 cups water
1 cup sugar
The seeds from one vanilla pod

Place the chopped rhubarb and water in a saucepan. When it starts to boil add some of the sugar mixed with the vanilla seeds. Taste as you go, as you may want the flavour either less or more sweet. Just adjust sugar as you like. Stir over a medium-low heat until the sugar dissolves and the rhubarb are soft. It will take 15 to 20 min. 

When ready, pour the mass through a sieve to separate the jam from the syrup. I like using small bottles and glasses as containers because it minimizes the amount of times you open the jars and risk bacteria forming. I always use re-cycled glass with different coloured or printed tops, and so I like to dress the jars up with a little piece of cut linen to make each one look as lovely as it tastes!

You can mix the rhubarb syrup with water in the proportion you like, and it will become a delightful cordial. To spice it up further use sparkling water and it becomes a homemade soda!

SBS On Demand is showing the Danish Movie ‘Another Round’. It is about a group of high school teachers who start an experiment, where they drink alcohol throughout the workday to see how it affects their social and professional lives. I enjoyed spending 1hour and 53 minutes transported to Copenhagen. The film takes place in the neighborhood I know so well and miss so much and that alone was a treat. The film won an Oscar for Best Foreign Language Film. In many ways it’s a sad movie about the consequences of alcohol abuse, but also a tribute to life with all its dilemmas!

These coriander flowers are SO pretty and elegant…They smell beautiful and you can eat them too…The plant has sowed itself just outside one of the garden beds. I will leave it there as a tribute to it’s strength and resilience for surviving our cold winter and frosts.

What a life‘ by Scarlet Pleasure is the title song to the Danish movie ‘Another Round‘. It has been playing on repeat in our home. It has its own special tone and I love it. As sad as the film is in many ways, the song is so life affirming and full of joy and celebration.
