Add a little hygge to each month

Along the roadside, the white lilies have quietly returned, and I have enjoyed picking them and decorating our home with their delightful scent and elegant beauty — a gentle reminder that Easter waits just around the corner. I find great comfort in the gentle repetition of these small seasonal wonders.

The late summer heat has stayed with us, and on the warmest days I find myself returning to a favourite: an ice-cold carrot soup — refreshing and nourishing — which I share with you here alongside ideas and recipes for Easter gathered from my Let’s Hygge Easter eBook.

This month also brought a birthday gift that became a beautiful memory: an evening on Bondi Beach listening to Crowded House, surrounded by thousands of voices singing every lyric together under the open sky. Their music forms part of the soundtrack of our youth, carrying me back to the days when we were renovating our first home together in Copenhagen.

For a quiet evening, I recommend the Danish film Before It Ends, currently on SBS Demand, telling a lesser-known story from the Second World War.

The white eggs are goose eggs from a dear friend, and the nest has been beautifully crafted by my mother from birch branches.

COLD CARROT SOUP WITH COCONUT MILK AND LIME

This wonderfully refreshing carrot soup is perfect for summer. The recipe is from VALDEMARSRO, a Danish food universe created by the talented Ann-Christine Hellerup Brandt. I have been so lucky to work with her by creating the graphic design on all of her Danish cookbooks.

This time, I added freshly grated turmeric and a chilli from the garden, leaving out the seeds so the flavour remained gentle rather than too hot. I served the soup in reused gin bottles, allowing guests to help themselves — a simple and relaxed way of sharing food on a warm day.

The recipe is usually served with a classic basil oil, but with my garden full of mint, I chose to make a blend of mint and basil instead. The result worked beautifully, with the mint adding a fresh and unexpected note.

Makes 4-6 serves

INGREDIENTS
1 onion, finely chopped
2 cloves of garlic, finely chopped
1 stalk lemongrass, split
2 tablespoon ginger, finely grated
1 tablespoon tumeric, finely grated
1 fresh chili (without seed), finely chopped
750 g carrot, cut into cubes
1 yellow pepper, diced
4 cups vegetable broth
1 can coconut milk
1 teaspoon of sugar
2 organic limes, juice and finely grated peel
salt
black pepper

BASIL & MINT OIL
1/2 handful of fresh basil
1/2 handful of fresh mint
1/4 cup olive oil
a pinch of salt

FOR SERVING
1 Lebanese cucumber, in small cubes
toasted pepita seeds
black pepper, freshly ground
bread 

Saute onion and garlic in olive oil in a pan over medium heat until soft and clear.

Add lemongrass, ginger, carrots, bell pepper and vegetable broth. Simmer until the carrots are tender.

Remove the lemongrass from the pan and blend the soup until it is creamy and delicious. Adjust both taste and consistency with coconut milk, a pinch of sugar, lime juice and finely grated zest, salt and pepper. Refrigerate the soup for about 3 hours or place in the freezer for about 30-40 minutes until the soup is completely cooled.

BASIL & MINT OIL
Blend the basil and mint, salt and oil until smooth and the oil is a nice green color.

SERVING
Blend the soup again just before serving. Serve the cold carrot soup with basil oil, small cucumber cubes and freshly ground pepper, as well as some bread.

let's hygge October 2021

This month I watched the Danish film Når befrielsen kommer — released in English as Before It Ends — currently streaming on SBS On Demand. It is a quiet and deeply moving story set during the final months of the Second World War. Based on true events, the film follows a Danish family faced with difficult moral choices as compassion and duty begin to collide.

It is one of those films that stays with you long after the screen goes dark. I found myself reflecting on the dilemmas the characters faced for days afterwards — a reminder that history is rarely simple, and that humanity often lives in the grey areas between right and wrong.

From my studio

Recently, I have begun sharing more of my creative rituals through workshops with members of my office community at Work Club Global here in Sydney. Together we have folded paper Christmas trees, shaped clay ornaments, and woven lavender wands — simple moments of making with our hands, away from screens. Later this month, we will gather again to create paper Easter eggs, welcoming the new season through creativity.
