Add a little hygge to each month

Spring is in full bloom, and I’ve been spending time in the paddock getting to know our nine new goat kids. It never ceases to amaze me how instinctively their mothers care for them — tucking them safely under big logs when they need a moment to graze or take a well-earned break from feeding. Every year I’m in awe of their resilience and how quickly they learn, explore, and play. I try to take inspiration from their curiosity and simple joy for life.

The garden is thriving too — lush, green, and bursting with energy. The herbs are flourishing, and we’ve been adding fresh mint to nearly every salad. The rhubarb has made its return as well, and I’m sharing a simple, traditional recipe that brings back wonderful memories from my childhood.

RHUBARB COMPOTE WITH TOASTED OATS AND NUTS
served with softly whipped cream

This simple dessert was a favourite growing up, and I still make it every year when the rhubarb returns to the garden. If it’s autumn where you are, apple compote is another wonderful alternative!

INGREDIENTS 

4-6 persons

Roasted oats and nuts
50 g butter
1½ cups rolled oats
½ cup (about 75 g) roughly chopped nuts — almonds, hazelnuts, or walnuts work well
½ cup (100 g) sugar

Rhubarb compote
400 g rhubarb (about one bunch)
1 vanilla pod
½ cup (100 g) sugar
2 tablespoons water (optional)

Serving
Softly whipped cream

1. Roast the oats and nuts
Melt the butter in a large pan over low to medium heat. Add the oats and sugar, and toast gently until golden and fragrant. Add the chopped nuts for the last few minutes of toasting. Stir often to prevent burning. Spread the mixture onto a sheet of baking paper to cool — it will crisp up as it cools.

2. Make the rhubarb compote
Rinse and trim the rhubarb, then cut it into 2 cm pieces. Split the vanilla pod and scrape out the seeds, mixing them with the sugar. Place the rhubarb in a saucepan with a couple of tablespoons of water to get it started. Bring to a gentle boil, then add the sugar and vanilla mixture. Let it simmer for about 10 minutes, or until the rhubarb is soft and tender. Taste and adjust with a little extra sugar if you prefer it sweeter. Allow the compote to cool completely before serving.

3. Serving
Layer the chilled rhubarb compote, roasted oats and nut mix, and softly whipped cream in small glasses or bowls. Repeat the layers if you like, and finish with a sprinkle of the crunchy oat mix on top.

From the time the boys were born, I’ve crafted an Advent calendar for their grandparents. It’s made up of 24 envelopes, each containing a photo from the past year. I decorate the envelopes with the date and little stamps or drawings, and on the back, I add a short caption. Each day in December, the grandparents open one envelope, revealing a small glimpse of our family life — a lovely way to relive shared moments and memories.

I’ve continued this tradition even as the boys have grown older, cherishing the chance to look back and highlight the year’s adventures. This year, I’ll be making an Advent calendar for my son and his girlfriend, who now live in Denmark — filled with photos from our wonderful Danish summer together.

We’ve been watching Families Like Ours, a powerful new Danish mini-series directed by Thomas Vinterberg. Set in the near future, when rising sea levels force an entire country to evacuate, the story follows one family as they navigate love, loss, and identity in the midst of crisis.

I had been avoiding watching it at first — the trailer looked quite dark — but I was happily surprised. The story is so beautifully told, and the characters are so gripping that I quickly became absorbed. It was also a special joy to see the church I’ve done graphic design for over the past 25 years play such a significant role in the story. With its incredible cast and emotional depth, Families Like Ours is a thoughtful and moving series that I can highly recommend.
